Collard Wraps and Homemade Hummus
I make collard wraps quite a bit these days. I love the simplicity of just piling on some hummus, a few sliced veggies, some avocado and there’s lunch. I decided this weekend to make my own hummus using my Vitamix. I like my hummus simple…not a lot of bells and whistles. This recipe was super creamy yet pretty low in fat.
I threw in 1 big can of chick peas (I drained about half the can), 1 Tbsp Tahini, 1 square frozen garlic (that square blob in the left corner), 2 Tbsp sesame seeds, 1 Tbsp olive oil, 1/4 cup fresh lemon juice, and 1 tsp each Celtic sea salt and cumin.
about 60 seconds later….
I had this. Yum.

You might be thinking that collard wraps are not family-friendly, but think again! My daughter loves them — especially when she gets to pick her own fillings!
Oh, and in case you were wondering, husbands will eat them, too.
