Pantry Challenge: Week #3 Meal Plan
I went on my $25 grocery run on Sunday and this Pantry Challenge is tougher than it looks. Who knew it would be so hard to resist food not on my grocery list? The pull of such treats like frozen chopped kale, sliced cabbage, and fresh baked bread are just too much. 🙂
So, yes, I went over by $10, but at least I didn’t bring in anymore pantry items, right? That’s the goal, to use up my pantry items. It’s just going to take a lot longer if I keep buying fresh produce that needs cooking.
This week I’m using up this big ole’ box of baby spinach and other fresh produce as well as what seems like my never-ending supply of quinoa.
Here’s what’s on the menu:
Sunday: Quinoa and Spinach Crustless Pie with Salad
Monday: Butternut Squash with Quinoa, Spinach and Walnuts
Tuesday: Black Pepper Tempeh (recipe here) on a bed of you guessed it…baby spinach!
Wednesday: Superfood Salad with grilled Tofu
Thursday: Crock Pot Lentil Chili
Friday: Dinner out for Suzy’s Birthday
Saturday: Leftover Chili
Sunday: Dinner at Sister’s house for Mom’s Birthday
