5 Ways with Meyer Lemons
I bought meyer lemons last week and they are still sitting in my fridge. I need to use them. I’ve been searching online for some fun recipes that use ingredients I already have in my pantry. I turned to Google and Pinterest to find recipes with food I have on hand. I searched cauliflower, lentils, endive, fennel, quinoa and kale. It was hard to narrow it down, but below are my top 5 picks from the blogosphere.
But first, a little about meyer lemons. Meyer lemons came to the US from China. The flesh is light orange-yellow and the juice is a marriage of a lemon and a mandarin orange. A citrus fruit at heart, meyer lemons are rich in vitamin C and antioxidants.

I love a veggie meatball recipe and these lentil meatballs from The Sprouted Kitchen are hard to resist. The meyer lemon is in the pesto, which looks kinda awesome.
