5 Ways with Meyer Lemons
I bought meyer lemons last week and they are still sitting in my fridge. I need to use them. I’ve been searching online for some fun recipes that use ingredients I already have in my pantry. I turned to Google and Pinterest to find recipes with food I have on hand. I searched cauliflower, lentils, endive, fennel, quinoa and kale. It was hard to narrow it down, but below are my top 5 picks from the blogosphere.
But first, a little about meyer lemons. Meyer lemons came to the US from China. The flesh is light orange-yellow and the juice is a marriage of a lemon and a mandarin orange. A citrus fruit at heart, meyer lemons are rich in vitamin C and antioxidants.
And now, my options:
This super easy lemony roasted cauliflower from YummySupper. Incorporates my beloved cauliflower, mint and pine nuts. YUM!
I love a veggie meatball recipe and these lentil meatballs from The Sprouted Kitchen are hard to resist. The meyer lemon is in the pesto, which looks kinda awesome.
This dish from Feed Me Pheobe is kinda perfect. Combines lemon with all of my favorites: cauliflower, fennel, and endive — what more could I ask for?
Okay, I don’t have any ingredients for this Gluten Free Rosemary Lemon Quick Bread (nor am I a baker) but doesn’t it look good?
And finally, this salad of Beluga lentils and quinoa with a meyer lemon dressing from A Stack of Dishes. Sounds simple and satisfying.
Now the decision is yours….which one should I make?
