5 Fruits & Veggies to Eat in October 🍠 🎃 Radishes, pumpkin, green beans, butternut squash, and sweet potatoes 1. Radishes: Excellent detoxifier that’s rich in potassium, vitamin C, and fiber. Enjoy raw, roasted, or pickled in salads, sandwiches, soups, wraps, tacos, salsas, and sushi bowls. 2. Pumpkin: Rich in potassium; iron; fiber; and vitamins A, C, and K. Add pumpkin flesh to soups, muffins, pies, and smoothies. You can also toss the seeds with olive oil and roast. 3. Butternut Squash: High in antioxidants, calcium, iron, and magnesium. Stuff with quinoa, veggies, and herbs; blend into creamy soups; or enjoy in salads and bowls. 4. Green Beans: Gut-friendly source of fiber, vitamin C, iron, potassium, folate, and calcium, Try them sautéed, steamed, roasted, grilled, or air-fried. 5.
