  • 2 cups vegetable broth
  • 1 tbsp extra virgin olive oil
  • 1 15 oz can chickpeas rinsed thoroughly and drained
  • 2 cups fresh broccoli florets chopped into 1" pieces
  • 3/4 cup farro uncooked, rinsed and drained
  • 1/2-1 tsp garlic powder
  • 1/4 tsp paprika smoked or sweet
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

  1. Preheat the oven to 400 degrees Fahrenheit. Add the vegetable broth, nutritional yeast, and spices to a medium pot and bring to a boil.

  2. Prepare an 8x8 dish by coating with extra virgin olive oil. Pour chickpeas and broccoli evenly into the prepared dish. Sprinkle the uncooked farro on top of the chickpeas and broccoli.

  3. Whisk the vegetable broth and spices until the spices are evenly distributed and pour the broth mixture into the dish.

  4. Cover the dish with foil and bake for 45-60 minutes, or until liquid is completely absorbed.

  5. Optional: Remove the foil and return to the oven. Turn the broiler on high for a few minutes or until desired crispness.

  6. Remove from the oven and serve immediately. This dish keeps in the refrigerator for up to 5 days or in the freezer for up to 4 weeks.
