Escarole and Beans

  • 2 Tbsp Olive Oil
  • 2 cloves garlic, minced or chopped
  • 2 cans white beans (not drained)
  • 2 bags escarole (or 2 whole heads)
  • salt & pepper to taste


  1. Saute the garlic in the olive oil in a large dutch oven. Add the greens and cook down. Add the canned beans and their juice. Season with salt and pepper, to taste!
